My Daal – not spicy for sensitive tummies (indopak)

So, I’ve really been craving homemade Desi food lately, but most of my family can’t handle the heat.

So I’ve come up with a yummy, tolerable, daal recipe that even the most sensitive of tummies can handle. 😛

Here’s what you need:

Dutch oven, or large pot with lid
1 lb brown lentils
1 c brown rice
1 c red quinoa
3 stalks celery chopped
3 large carrots peeled & chopped
1 yellow onion diced
1-2 quart veg stock
2 cups water
2 tsp kosher salt
3 tsp curry powder (I like badia brand)
2 tsp minced garlic
Bring water & veg stock to a simmer. Add lentils & veggies.
Simmer uncovered for ten.
Add onions.
Add seasonings & simmer for 30-45 adding water or veg stock if needed.
Add in grains & simmer for 15 stirring occasionally.

Now, if you would rather your veggies softer, you can start by adding those to your dutch oven on med-low heat & saute with 2 tbsp EVOO. Then continue the recipe as listed above. I just like to have a bit of crunch. 🙂
