let’s be frugal: black bean soup for a week

Black bean soup all week for lunch – yummy in my tummy.

1 lb black beans soaked overnight
1/2 large white onion, diced
2-4 garlic cloves, minced or 2-4 tbsp garlic minced
1 tbsp cumin
1 tsp oregano
1 tsp chili powder
1 bunch cilantro, removed from stems & chopped
1 orange, red, or yellow bell pepper, diced
optional: hot peppers, tortilla strips, sour cream, &/or avocado for serving

Place soaked beans in a DO (or large pot with lid) & cover with water, about 2 inches.
Boil for about 7-9 minutes.
Add onion,garlic, cumino, oregano, chili powder, cilantro, & bell pepper.
Simmer for an hour & a half.
Serve how you like it.

Yield: 10 servings

* 115 calories, 24 g carbs, 1 g fat, 7 g protein, 14 g sodium, 2 g sugar
