I’m starting my new years resolutions early.
In the last year I have gained almost 100 lbs, from stopping cigarettes & from medications.
So I’m so ready to get this weight off lol..
Here’s what you’ll need
10 large carrots, cut 1/2″ rounds
1 bunch kale, removed from stems & torn into bite size pieces
1/2 large white onion, roughly chopped
3 celery stalks, roughly chopped
2 quarts (8 cups) veggie stock, no salt
2 tbsp EVOO, divided
Peel & chop your carrots, onion, & celery.
Remove your kale from the stems & tear into bite size pieces.
Saute your kale in 1 tbsp EVOO in one skillet.
& your onion, & celery in another skillet with the other tbsp EVOO.
In the meantime, heat your veggie stock in a dutch oven or large pot with lid.
Once the veggie stock is warm add your carrots.
When your onion & celery skillet looks like this, with the onions transparent,
scoop the onions & celery out of the skillet & stir them into the veggie stock.
Next, stir in the kale.
Simmer for an hour & serve hot.
