I have been wanting pork chops like CRAZY!
& when I saw some stuffed chops at the butcher this weekend it made me want them even more.
But $6 for a 1/2 lb pork chop is just not happening.
So, I made my own.
4 1-1/2″ thick pork chops
1 lb plain pork sausage – not the link kind, the ground kind – actually, maple would probably be good too!
1 tbsp sage (1 tsp per 1/4 lb of sausage)
1 large yellow onion, sliced thin – but not julienned
1 large fresh jalapeno, sliced
2 tbsp butter (for the onion & jalapenos)
First you gotta cut a little pocket into your pork chops like so.
Preheat your oven to 400F.
Next you want to season the chops.
Then throw the sausage on the stove & season with the sage.
Cook until done & drain.
Stuff your pork pocket with the sage sausage & bake at 400F until the internal temp reaches 190F.
In a new skillet, melt 1 tbsp butter & caramelize the onion.
Move to a bowl & cool slightly.
Then melt the other tbsp & caramelize the jalapeno.
When the pork chops are done, remove them from the oven & top with caramelized onion with jalapenos on the side.
I made collard greens to go with mine!
