savory & sweet – caramelized pear & crumbled bacon tart

My aunt brought home a box of over ripe green pears on Christmas Eve.

Her boss gave them to her.

They were too ripe to eat, so she told me “Reagan, make something with these.”

So I made something with them.

A caramelized pear & crumbled bacon tart.

I’m not crazy I swear.

It works.

1 single pie crust
5 green pears
2 tbsp butter
1/3 c sugar
1/4 c honey
4 strips thick bacon

Slice your pears 1/2″ thick.

Then toss the butter in the skillet & melt it.

& cook for 10 minutes.

Then add local honey.

Bubble it up.

& in another skillet, fry the bacon.

When the pear filling is ready it will look like this:

Grease your tart pan – I used a flan pan.

Roll out the pie crust then lay it in the pan.

Then pour the pear into the pan, & top with crumbled bacon.

Bake at 350F for about 30 minutes, until it doesn’t jiggle.
