It’s my cousin’s birthday, coincidentally her super cool self & her super dope hubby are my best friends EVER. πŸ™‚


Since, I can’t be with them celebrating, I’m wishing her a happy birthday the only way I know how – through food LOL.


Remembering all the fun times we have had together, home in Houston & in NOLA, all the adventures, the funky restaurants, & home cooked meals – I wanted to highlight both of our love of cheese. So here’s your own salad.

Chelsea’s Salad

1/2 c crumbled feta
3 handfuls fresh baby spinach, washed & stems removed
1/2 small red onion, julienned
1 small green apple, washed & julienned
Sweet vinaigrette, I used honey pecan πŸ˜‰

Julienne your onion & your apple.

Toss the apple, onion, & feta in a large bowl with the spinach. Be careful not to squish it. You want it to stay light & fluffy. πŸ™‚

Drizzle a little bit of some sweet vinaigrette on top, & toss.
