charred gold beet salad

Hey y’all.

I’m still waiting for the ground to dry up over at Three Sisters so I can show y’all a tour of their farm. But, I grabbed these beautiful gold beets from there, so I made this yummy salad.

2 c kale, stems removed & torn into bite-sized pieces
4 small gold beets, peeled
1/4 c white onion, roughly chopped
1 handful of walnuts, roughly chopped

So first you need to preheat your oven to 400F.

While it heats, peel the beets, tear the kale, & chop the onions & walnuts.

Roast the beets for about an hour until they are charred on the outside & soft on the inside.

Chop them into bite-sized pieces.

Then toss everything together.

I drizzled a little EVOO on mine instead of dressing & it was super yummy! 🙂

Lately, I’ve been eating lots of salad.

Yum, kinda.

I have to switch things up a bit every day otherwise I get bored quick.

Isn’t that arugula fabulous? I got it at Three Sisters Farm.

3 c fresh arugula
1 anjou pear, chopped
1 green apple, chopped
oil & vinegar

Toss the arugula, pear, apple, oil & vinegar together.

Makes a great entree if you add a bit of protein!

butter lettuce & bbq chicken salad for one

I didn’t grow up eating healthy. I was very, very active though.

So, I’m trying to get active again, & I’m training my palate to enjoy vegetables. & like I’ve told you before, I’m obsessed with farm-to-table because everything is so much better that way.

If I’m going to learn to love vegetables (so far it’s successful) it’s going to be local vegetables, & I’m going to make friends in the process. 😛

This butter lettuce is from Three Sisters Farm & is soooooo crunchy!

1/2 head butter lettuce, chopped
4 cherry tomatoes, sliced vertically
1/3 c grilled chicken, chopped
1 tbsp bbq sauce
2 tbsp white onion chopped

Toss the vegetables together in a small bowl. In a separate bowl toss the chicken & bbq sauce so the chicken is coated.

Serve on a salad plate. 🙂

kale, leek, & pomegranate balsamic roasted beet salad

So I’m kind of obsessed with kale.

Have I told you I buy them in bulk? Because I do.

I’m also obsessed with beets.

Yup.

Even though they turn me pink. Hehehe.

So, I combined them (plus a leek) to make a salad. 🙂

Here’s what you’ll need:

2 1/2 c raw kale, stems removed & torn into bite size pieces
2 Pomegranate Balsamic Roasted Beets (recipe here), chopped
1 c chopped leek

Combine all ingredients in a bowl.

How to give a new life to wilted greens

Hey there!

So sorry I took a mini hiatus.

Between dad coming home from a knee replacement & my 24/7/365 caring for Miss Thang I’ve been a tad busy.

But, tomorrow I’m guest posting for my friend Valerie on her blog: The Kitchen Revival. I’m sharing my GF DF breakfast cookie recipe (with a SF option). So head over there tomorrow & check it out. 🙂

& today I’ll show you how to give a new life to your wilted greens.

So. I’m absolutely obsessed with kale & carrots right now. Just completely 100% obsessed.

& honestly I kind of hoard them a little bit. Which is embarrassing.

I mean, seriously, I buy them in bulk.

& I eat them all by myself.

Well, mostly.

So I went to the fridge this morning & saw a sad bunch of kale.

& when I say said, I mean pretty wilted.

& when I say pretty, I mean very.

& I seriously hate wasting food.

I regrow lettuce, onions, celery, really anything I can (how-to post in the works).

So I removed the kale from the stems & tore it into bite size pieces.

I filled up my (very clean) kitchen sink with water & tossed the kale & a few sad carrots in.

I left it for about 45 minutes & then threw the kale into my salad spinner.

Spun it around a few times to get rid of the excess moisture.

& voila!

Ready to eat kale. Once again.
